Ingredients

  • 125 g (1/2 of 250-g pkg.) Philadelphia Brick Cream Cheese , softened
  • 1 pkg. (300 g) frozen chopped spinach , thawed, well drained
  • 1-1/4 cups Kraft Mozzarella Shredded Cheese , divided
  • 6 Tbsp. Kraft 100% Parmesan Grated Cheese , divided
  • 6 small boneless skinless chicken breast s (1-1/2 lb./675 g), pounded to 1/4-inch thickness
  • 1 egg
  • 10 Ritz Cracker s, crushed (about 1/3 cup)
  • 1-1/2 cups pasta sauce

Preparation

Step 1

Heat oven to 375°F.


Mix cream cheese, spinach, 1 cup mozzarella and 3 Tbsp. Parmesan until blended; spread onto chicken. Starting at one short end of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired.


Beat egg in shallow dish. Mix remaining Parmesan and cracker crumbs in separate shallow dish. Dip chicken in egg, then roll in crumb mixture to evenly coat. Place, seam sides down, in 13x9-inch baking dish sprayed with cooking spray.


Bake 30 min. or until chicken is done (170°F), heating pasta sauce near the end of the chicken baking time. Discard toothpicks. Serve chicken topped with pasta sauce and remaining mozzarella.

MAKE AHEAD
Assemble chicken bundles and place in baking dish as directed. Refrigerate up to 4 hours. When ready to serve, bake, uncovered, in 375°F oven 35 min. or until chicken is done (170°F).

SPECIAL EXTRA
Stir chopped fresh basil and/or sliced black olives into pasta sauce before heating.

VARIATION
Prepare using Philadelphia Light Brick Cream Cheese Spread, Kraft Part Skim Mozzarella Shredded Cheese, Kraft 100% Parmesan Light Grated Cheese and Ritz 30% Less Fat Crackers.

  • 1/2 cauliflower head
  • 8 eggs for cauliflower mix
  • Pepper
  • Salt
  • 4-6 cups shredded cheese
  • 6 slices salami
  • 6 tbsp pizza Sauce

 

Method

  1. Boil diced cauliflower in salted water until tender.
  2. Blend, then transfer to mixing bowl.
  3. Mix in 2 eggs, pepper and 2 cups of shredded cheese
  4. Share the cauliflower mixture out between 6 ramekins, forming little cups
  5. Add 1 cup of shredded cheese
  6. Bake for 25 min at 375°F
  7. Add a slice of salami, a tbsp of pizza sauce, and one raw egg to each ramekin
  8. Top with cheese and return to oven for 7 min at 375°F
  9. Serve, and enjoy!
