Ingredients

  • 3/4 cup whole wheat flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 12 Tbs unsalted butter
  • 1 cup light brown sugar
  • 1/4 cup granulated sugar or sweetner
  • 1 egg
  • 3 cups granola
  • 1/2 cup chopped dried apples
  • 1/2 cup raisins
  • 3 Tbs creamy peanut butter
  • Almonds
  • Cashews
  • Pecans
  • 2 Tbs milk
  • 1 Tbs flax seed
  • 1 cup plus 3 Tbs confectioners sugar

Preparation

Step 1

Preheat the oven to 350*F
Grease a quarter sheet pan and line with parchment paper
Grease the top of the parchment paper

Step 2

In large bowl whisk flour, salt and baking soda

Step 3

In 2nd bowl, use electric mixer and beat butter on medium speed for 2 minutes until creamy. Add brown sugar and granulated sugar at lower speed for 30 seconds. Then increase speed and beat for another 2 minutes.

Step 4

Reduce the speed to low and add egg for 1 minute. Increase speed to medium low and beat in peanut butter and flour until creamy.

Step 5

Add granola, flax, dried apples and nuts
Bake for 25 minutes or until toothpicks come out dry and clean
