Mommy's Roast Beef
This is a favorite dish of my family's with a rich dark gravy perfect for potatoes on the side.

Ingredients
- 1 beef eye round roast (2-2 1/2 lbs)
- 2 Tablespoons vegetable oil
- 1 medium onion, chopped
- 1 cup brewed coffee
- 1 cup cold water, divided
- 1 tablespoon beef boullion granules
- 2 teaspoons dried basil
- 1 teaspoon dried rosemary, crushed fine
- 2 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup all-purpose flour

Preparation
Step 1
In a Dutch oven, brown roast in oil on all sides. Add onion; cook and stir until tender.
Step 2
Add coffee, 3/4 cup of water and boullion to the pan.
Step 3
Combine basil, rosemary, garlic, salt and pepper. Sprinkle over the roast. Bring to a boil.
Step 4
Reduce heat; cover and simmer 2- 2 1/2 hours or until meat is tender. Remove roast; let stand 10 minutes before slicing.
Step 5
Combine remaining water and flour and stir into the juices in pan. Simmer until thickened; about 1-2 minutes. Serve gravy over roast and mashed potatoes.
