Ingredients
- 1 1/2 Pounds Small Red Potatoes
- 1 tablespoon Olive Oil
- 1 Medium Onion chopped
- 1 Clove Garlic crushed
- 1 cup Chicken Broth
- 1 cup chopped Parsley or 2 tablespoons dried, divided
- 1/2 teaspoon Ground Black Pepper

Preparation
Step 1
Wash and scrub potatoes. Cut into quarters and place in a bowl. Cover completely with cold water.
Step 2
In a large skillet heat oil over medium-high heat. Add onion and garlic. Cook until golden brown. About 3 minutes. Add broth and 3/4 cup fresh parsley or 1 1/2 tablespoons dried stir until well blended. Bring to a boil.
Step 3
Drain potatoes and add to skillet in a single layer. Cover skillet and reduce heat. Simmer until potatoes are tender. About 15 minutes. Spoon into large bowl.
Step 4
Pour sauce over potatoes. Sprinkle remaining parsley and pepper. Serve immediately.
