Fat-Free Muffins
Fat-free? Really? Yes!!
This is a recipe my parents developed before I was born and have been using my entire life, so I literally grew up thinking that muffins were supposed to be fat-free! There are obviously many different flavorings you can add- be creative!

Ingredients
- Dry:
- 3 C Flour
- 1 1/2 T baking powder
- 1 1/2 t salt
- 1 C sugar
- 1 C Milk
- 2 Eggs
- 1 1/2-2 C of your flavoring of choice (choc chips, dried fruit, nuts, etc)

Preparation
Step 1
Pre-heat the oven to 350 F. Mix the dry ingredients together.
Step 2
In a separate bowl, beat the eggs in the milk.
Step 3
Add the dry ingredients to the wet mixture and mix thoroughly.
Step 4
Add the flavorings and mix (if adding nuts, you can add whole nuts before you add the dry mix and the beater will chop them up as it mixes the batter).
Step 5
Lightly grease a 12 muffin tin, OR put liners in a 12 muffin tin.
Step 6
Spoon the batter into the tin, keeping each cup roughly evenly full.
Step 7
Bake at 350 F for 30 minutes.
Step 8
If using muffin liners, take out of tin immediately and let cool at least a few minutes before taking out of wrappers. If using a greased tin, let whole tin cool until it is cool enough to touch, then remove muffins from pan.

Several favorite variations include include: chocolate chips+pecans/almonds, dried cherries+1 tsp of almond extract, sub brown sugar for white and 1 C of oatmeal for 1 C flour
