Green Enchilada Sauce

Ingredients

  • 1 lg onion
  • 5-6 garlic cloves (1/2 t per clove)
  • 2 green bell pepper
  • 1-2 jalapenos seeded
  • 1 1/2 lb tomatillos husked and halved
  • 1/2 bunch cilantro
  • 1 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 1/2 t cumin
  • 4 c chicken broth
  • 2-3 Tbsp sugar optional

Preparation

Step 1

Sautee onions and garlic.

Step 2

Combine tomatillos, green pepper and cilantro in blender.

Step 3

Pour tomatillos mix over the onions and garlic. Add broth, salt, pepper, cumin.

Step 4

Simmer 15 min-1 hour.

Freezer enchilada sauce! Can be enchilada sauce or chip dip.
