Ingredients

  • 2-3 T olive oil
  • 1 large onion
  • 5-6 garlic cloves minced and pressed
  • 2 green bell peppers
  • 1-2 jalapenos, seeded
  • 1.5 lbs tomatillos husked and halved
  • 1/2 bunch cilantro
  • 1.5 t kosher salt
  • 1/4 t black pepper
  • 1.5 t cumin
  • 4 c chicken broth
  • 2-3 T sugar optional

Preparation

Step 1

Sautee onions and garlic until tender in saucepan with olive oil.

Step 2

Combine tomatillos, green peppers, and cilantro in blender. Process until smooth add chicken broth if needed.

Step 3

Pour tomatillo mixture over onion and garlic and add chicken broth, salt, pepper, and cumin.

Step 4

Simmer 15 min-1 hour.

Makes about 2 quarts.
