  • 1 lb. butter
  • 2 c. sugar
  • 4 c. flour
  • 12 eggs
  • 1 lb. pecans
  • 1/2 lb. slivered almonds
  • 1 tsp. nutmeg
  • 1 tbsp. vanilla
  • 1 tsp. salt
  • 1 lb. citron mix fruit
  • 1 1/2 lb. candied pineapple
  • 2 1/2 lb. white raisin
  • 1 lb. candied cherries (1/2 green, 1/2 red)
  • 1/4 oz. lemon extract
  • 1 tsp. orange extract
  • 2 tsp. almond extract
  • 2 cup orange juice or pineapple

Preparation

Step 1

Mix juice and flavoring. Pour over cut fruit and let set for a couple hours or overnight. Toss fruit mixture with 1cup flour before you mix the batter. Cream butter and sugar till light add eggs one at a time till creamy. Add dry ingredients flour and fruit and nuts. Bake in slow oven 250 for 3 hours if in 2 pans. To prevent burning set a pan of water underneath cakes. Yields 12 small pans or 6 - 2 lb. pans
