Yorkshire Pudding (Popovers)

I have been eating these my entire life. I learned about them when I was young from my Mother & Grandmother because they made them all of the time. They are awesome alone with jelly on them or good with Beef Stew or a pork roast . Just about anything.

Ingredients
- 1 tablespoon unsalted butter, melted, plus more for greasing tin
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 2 large eggs
- 1 1/4 cups milk

Preparation
Step 1
Preheat oven to 450 degrees. Heavily grease a popover tin.
Step 2
In a large bowl, whisk together flour and salt. In a separate medium bowl, whisk together eggs, milk, and 1 tablespoon melted butter. Pour over flour mixture, and fold until just blended.Fill the popover cups two-thirds to three-quarters full.
Step 3
Transfer tin to oven, and bake for 15 minutes. Reduce the temperature to 350 degrees, and bake until well browned and crusty, about 20 minutes. Remove popovers from the oven, and put onto a rack, and serve immediately.
My Grandma showed me a trick she used when making these. She put a small amount of oil into each muffin tin spot & pre-heated it into the oven, When it was good & hot she would then take out & pour the batter into the tin & put in oven to cook.
* I also like to triple this recipe because there is no way this small amount will be enough. Everyone loves them & are even good for left over all by themselves. Just heat up in microwave for about 15 secs & put some jelly on it. YUM!
