Ingredients

  • 3 each Baking Potatos
  • 2 Tbls Butter, melted
  • 4 each Bacon Strips
  • 1 Cup Shredded Cheddar Cheese
  • 1/2 Cup Sour Cream
  • 1 each Green onion, for garnish
  • Salt & Pepper to taste

Preparation

Step 1

Bake off your potatoes. These medium sized potatoes took 1 hours at 400 degrees. Make sure to scrub them real good under running water first to get all the dirt off them. Yuckie.

Step 2

Cut in half and scoop out the insides with a spoon. Save the insides for something else like mashed potatoes or potato cakes!

Step 3

Cut them into 4th’s and brush with melted butter and season with salt and pepper to your taste.

Step 4

Cut the bacon into 1/2 strips and fry until crispy.

Step 5

Place the skins in an oven safe dish and top with the cheese. Bake at 350 degrees for about 3-5 minutes until the cheese is just melted. Top with the sour cream then the bacon. Add the green onions finely sliced for garnish if you prefer!
