Spedinis / can be made with chicken , beef, or pork

I grew up in an Italian family.I would help Nana assemble the Spedinis when we were kids. This was my first attempt on my own to recreate one of my favorite recipes. These fried, chewy, crispy, soft, salty, mouthwatering appetizers are simple to make and worth every calorie.

Ingredients
- 1 pound eye of round (ask butcher to slice 1/4-inch thick)
- Olive oil, extra virgin or pure
- Bay leaves
- 2 medium onions
- 1 cup Italian seasoned bread crumbs
- 1/2 cup Parmesan cheese
- 1 teaspoon garlic powder
- 6 to 8 metal skewers
- Hard Salami

Step 1
Set oven on high broil. Gently pound out each piece of meat to 1/8 inch thick. (If pieces are larger than 3 inches wide, cut in half to get 2 strips no smaller than 2 inches wide.)
Peel and quarter onions. Separate onion layers.
Combine bread crumbs, Parmesan cheese and garlic powder in a shallow bowl. Pour about 1/3 cup olive oil into another shallow bowl.
Step 2
Dip each strip of meat into the olive oil, letting the excess drip off, and press 1 side into the bread crumb mixture. Lay on work surface, crumb side down, and roll up tightly. Place 1 onion shell on a metal skewer and 1 small bay leaf next to the onion. Skewer the roll of breaded meat and repeat the process, ending with an onion shell to keep the meat from falling off.
I also add a small triangular piece of hard salami with the onion between pieces.
Place the skewers on a foil-lined broiler pan and broil 4 inches from the heat for 4 minutes on each side or until golden. Serve with your favorite pasta.

Dough:
- 2 cups flour
- 1 cup olive oil
- 2 tbsp sugar
- 2 tsp salt
- 1/4 cup milk
- Water
Filling:
- 1 onion, diced
- 1 lb ground beef
- A pinch of salt
- 1/2 cup water
- 1 cup tomato sauce
Method
- Mix flour, sugar, salt, milk, and water in a pan, and mix until you form a dough.
- In a saucepan, heat a splash of olive oil and add the onion. Cook on medium-high until onion has softened.
- Add the ground beef, and add the salt, water, and tomato sauce. When the meat has browned, remove from heat.
- Dust a flat surface with flour, and roll out the dough into a flat sheet.
- Use a ramekin or cup to cut out circles.
- Add a dollop of beef-tomato mixture to the center of each circle.
- Pinch the dough into a little pocket.
- Bake in the oven at 350° F for 15 minutes.
