Ingredients
- 1 lb. (450 g) pork tenderloin , cut into bite-size pieces
- 1 each green and red pepper , coarsely chopped
- 1 onion , coarsely chopped
- 1/3 cup Philadelphia Light Cream Cheese Spread
- 1 Tbsp. Thai green curry paste
- 1/2 cup lite coconut milk
- 1/2 cup water
- 1 cup snow peas
- 2-2/3 cups hot cooked long-grain brown rice
- 1/4 cup chopped fresh cilantro

Step 1
Cook and stir meat in large skillet sprayed with cooking spray on medium-high heat 4 min. or until evenly browned. Add peppers and onions; cook 4 to 6 min. or until crisp-tender, stirring constantly.
Add next 4 ingredients; cook 3 min. or until cream cheese spread is melted, stirring constantly. Bring just to boil; simmer on medium-low heat 8 min. or until meat is done, stirring frequently. Add snow peas; cook and stir 2 min.
Serve over rice; top with cilantro.
SPECIAL EXTRA
Top with 1/4 cup toasted shredded coconut just before serving.
