No Crust Spinach Bacon Quiche

Ingredients

  • 6 large eggs beaten
  • 1 1/2 cup heavy cream
  • 2 cups chopped and packed spinach
  • 1/2 to 1 pound cooked crumbled bacon
  • 1 1/2 cup shredded Swiss cheese
  • Salt and pepper

Preparation

Step 1

Pre-heat oven to 375 degrees.
Combine eggs, cream, salt and pepper in blender or mixer.

Step 2

Layer the spinach, bacon, then cheese in 9 inch glass baking dish. Pour the egg mixture on top. It will be very full.

Step 3

Bake for 35 minutes until the egg mixture is set and inserted knife comes out clean. Let set 10 minutes before cutting into 8 wedges.
