Ingredients
- 1 egg
- 1/2 cup sugar
- 1/3 cup oil
- 3 Tbsp apple juice
- 1 tsp vanilla
- 3/4 cup flour
- 1 tsp baking powder
- pinch of salt
- 1/3 cup brown sugar
- 1 tsp cinnamon
- 4 apples

Preparation
Step 1
peel, core and slice apples and arrange in 9x9 pan
Step 2
beat egg and sugar until thick and light
Step 3
beat in oil, juice and vanilla
Step 4
add flour, baking powder and salt and mix just until blended
Step 5
mix brown sugar and cinnamon. Sprinkle some on the apples, then pour batter over. Sprinkle remainder over top of batter
Step 6
bake 40 minutes at 350 degrees
