Easy Corn Dogs (Mini style!)

Mix the dry ingredients.
Add oil to a frying pan, about 2 inches, and heat on medium/high heat.
Add egg and milk to dry ingredients.
Wait for oil to get hot.
Dip a hotdog piece into batter so it’s covered (this part can get a bit messy :) )
Place into frying pan of hot oil. Let sit until side is golden brown (about 3 min.) then turn and repeat on other side)
I usually dip and fry about 5 pieces at a time. You want to leave some room so you can turn the pieces.

- A pack of 8 hot dogs, cut each one in thirds (I get organic all beef)
- 1/2 cup yellow cornmeal
- 1/2 cup all-purpose flour
- a dash of salt and pepper
- 1 8 cup white sugar
- 2 tsp baking powder
- 1 egg
- 1/2 cup milk
- oil, for frying – Vegetable or coconut
