Lemon Chicken with Broccoli and Peppers

Ingredients

  • 1 tbsp. oil
  • 1 lb. boneless skinless chicken breast strips
  • 2 cups broccoli florets
  • 1 small sliced red pepper
  • 1 pkg. Lemon Jelly Powder
  • 1 Tbsp. cornstarch
  • ½ cup chicken broth
  • 2 tbsp. Italian Dressing
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 2 minced cloves garlic
  • 1 ½ tsp grated fresh ginger

Preparation

Step 1

Marinate chicken strips in dressing and lemon juice for a few hours
Heat oil in large skillet on medium-high heat. Add chicken; cook 4 min. or until done, stirring occasionally. Add brocolli and peppers; cook and stir 2 or 3 min.
Mix dry jelly powder and cornstarch in small bowl. Add lemon zest, ginger, garlic and broth. Mix until jelly powder is dissolved. Add to skillet; cook on medium heat 2 or 3 min. until sauce is thickened.
