Asian Chicken Lettuce Wraps

Ingredients
- 1/4 cup Hoisin Sauce
- 1 Tbsp. Soy Sauce
- 2 Tbsp. Vegetable Oil
- 1 lb. Ground Chicken or Turkey
- 1 large carrot - Peeled and Finely Diced
- 3 Cloves Garlic - Finely Chopped
- 4 Scallions - Whites and Greens Separated Finely Chopped
- 1 Large Head Butter Lettuce - Leaves Separated
- Sriracha Sauce - Optional For Drizzling

Preparation
Step 1
In a small bowl, combine the hoisin sauce and soy sauce with 1/3 cup water.
Step 2
In a large skillet or wok, heat 1 Tbsp. oil over medium-high heat. Add the chicken and cook, breaking apart with a wooden spoon, 4 minutes.
Step 3
Reduce heat to medium, add the carrot and 1 Tbsp. oil and cook, stirring, about 2 minutes. Add the garlic and scallion whites and cook 1 minute. Stir in the hoisin mixture and cook until sauce thickens, 1-2 minutes.
Step 4
Divide the lettuce leaves 4 ways and top with chicken. Sprinkle with scallion greens.
