Cauliflower Crust Calzones

Ingredients
- 1 Small Cauliflower Head - Cut into Small Florets
- 1/2 cup Shredded Mozzarella Cheese
- 1 Lightly Beaten Egg
- 1/2 tsp. Salt
- 1/2 tsp. Oregano
- 1/4 tsp. Pepper
- 6 Tbsp. Thick Tomato Sauce
- 1/2 cup Mozzarella Cheese
- Pinch of Salt

Preparation
Step 1
Preheat oven to 450 and place a rack in the middle. Line a baking sheet with parchment paper and grease liberally with olive oil.
Step 2
In a food processor, rice the cauliflower florets in batches (process until evenly chopped but no pulverized). Microwave on high 8 minutes, until cooked.
Step 3
Place in a tea towel and twist to squeeze out as much liquid as possible (the drier, the better). Transfer to a mixing bowl and add the egg, cheese, oregano, salt and pepper. Mix well.
Step 4
Using your hands, press the mixture onto the baking sheet and shape into 3 disks (about 5 inches). Place in the oven and bake for exactly 10 minutes.
Step 5
Remove from the oven and, working quickly, top half of each disc with tomato sauce and cheese. Using a large spatula, carefully lift the half without filling and fold it over the other half. Use your fingers to push the edges together and seal in the filling. Bake an additional 12 minutes.
