Ingredients
- 1/3 cup ketchup
- 3 tbsp soy sauce
- 2 tbsp brown sugar
- 1 tbsp white vinegar
- 4 tsp cornstarch
- 1 can (20 oz) pineapple chunks undrained
- 8 oz snow pea pods cut diagonally in half
- 2 plum tomatoes cut in wedges
- 2 tsp canola oil
- 2 garlic cloves minced
- 12 oz medium shrimp tails removed

Preparation
Step 1
Combine ketchup, soy sauce, brown sugar, vinegar, and cornstarch til blended. Set aside
Step 2
Drain pineapple and save 1/2 cup of the juice. Mix the 1/2 cup of pineapple juice into the ketchup mixture.
Step 3
Heat oil in skillet over medium high heat until hot. Add pea pods and garlic. Stir-fry for 1 minute. Reduce heat to medium.
Step 4
Stir ketchup mixture into the skillet and bring to a boil. Stir 1 minute until thickened.
Step 5
Add pineapple and shrimp to skillet. Toss to heat thoroughly. Gently stir in tomatoes and remove from stove
This is a colorful dish and good served over rice.
