Ingredients

  • 1 1/2 c. Sugar
  • 10 tbsp. Unsweetened Cocoa Powder
  • 6 tbsp. Cornstarch
  • 1/2 tsp. Sal
  • 4 c. Milk
  • 6 Beaten Egg Yolks
  • 2 Baked Pie Crust6 Egg Whites
  • 12 tbsp. Sugar
  • 1/2 tsp. Cream Of Tartar

Preparation

Step 1

Mix together sugar, cocoa, cornstarch and salt in a medium saucepan. Gradually mix in milk. Cook and stir constantly over med. heat until thick and bubbly.

Step 2

Reduce heat to med. low; cook and stir 2 min. more. Remove from heat. Stir about 1 c. of mixture into egg yolks; pour back into pan.

Step 3

Return to heat and bring to gentle boil. Cook and stir for 2 min. Remove from heat and add in vanilla. Pour into crust.

Step 4

In clean bowl beat together egg whites and tartar. until you have soft peaks. Gradually beat in sugar, and continue to beat until stiff and glossy. Spread evenly over hot mixture. Seal to crust.

Step 5

Bake at 350 degrees for 12-15 min. or until golden.
