Ingredients

  • 1/2 c. low fat milk
  • 1 tsp. poultry seasoning
  • 1 c. crushed cornflake cereal
  • 1 1/2 Tbsp. onion powder
  • 1 1/2 Tbsp. garlic powder
  • 2 tsp. black pepper
  • 2 tsp. crushed red pepper
  • 1 tsp. ground ginger
  • 4 chicken drumsticks
  • 4 chicken breasts
  • 1 dash of paprika
  • 1 tsp. vegetable oil

Preparation

Step 1

Preheat oven to 350 degrees F.

Step 2

Add half tsp. poultry seasoning to milk.

Step 3

Combine all other spices with cornflake crumbs and place in plastic bag.

Step 4

Wash chicken and pat dry. Dip each piece of chicken in milk, shake to remove excess, then put chicken in plastic bag and quickly shake with seasoning and crumbs. Place coated chicken on plate.

Step 5

Refrigerate for one hour.

Step 6

Remove from refrigerator and sprinkle lightly with paprika for color.

Step 7

Evenly space chicken on greased baking pan.

Step 8

Cover with aluminum foil and bake for 40 min. Remove foil and continue baking for an added 30 to 40 min. or until meat can be easily pulled away from bone with fork.

Drumsticks may require less baking time than breasts. Do not turn chicken during baking. Crumbs will form crispy "skin."
