Slow Cooker Chicken Fajitas

Ingredients
- 1 pound boneless skinless chicken breast halves
- 1 medium yellow onion, cut into slices
- 1 large red bell pepper, cut into thin trips
- 1 large green bell pepper, cut into thin strips
- 1 can Ro*Tel (this is simply diced tomatoes and green chiles)
- 1 packet of taco seasoning
- tortillas plus choice of garnishes (cheese, salsa, guacamole, etc.)

Step 1
Place chicken breast halves (cut each large chicken breast in half length-wise) in the bottom of your slow cooker.
Sprinkle 1 packet or 1/4 cup of homemade taco seasoning over the chicken. Top chicken with 1 can Ro*Tel and slices of red bell pepper, green bell pepper, and onions. Cook on low for 7-8 hours or on high for 4 hours until chicken is tender.
When the chicken is cooked, remove it from the slow cooker and use two forks to shred the chicken.
Return the chicken to the slow cooker and stir to combine. There will be a substantial amount of liquid in the slow cooker, so use a slotted spoon for serving to prevent your tortillas from getting soggy.
Place chicken and vegetable mixture on tortillas and top with garnishes of choice. Serves 6.
