  • 1 1/3 cup flour, 1/4 cup white sugar, 1 tbsp. baking powder, 1/2 tsp. salt, 1/4 cup shortening, 3/4 cup uncooked quick oats, 2/3 cup evaporated milk, 1/2 cup maple syrup, 1 beaten egg.

Step 1

Combine flour, baking powder and salt. Cut in shortening until mixture resembles coarse crumbs. Stir in oats. Mix evaporated milk, maple syrup and egg. Add to dry ingredients all at once; stir just until moistened. Fill greased muffin cups 2/3 full. Bake at 400 degrees f for 20 to 25 minutes. Remove from pan immediately. Serve warm.
