Ingredients
- 4 Salmon fillets
- 1 tbsp. olive oil
- 2 cups baby spinach
- 1 tomato, chopped
- 1/2 onion, chopped
- salt and pepper to taste
- 1 tsp. lemon juice
- feta cheese, crumbled

Preparation
Step 1
Preheat oven to 350 F.
Step 2
Brush each salmon fillet on all sides with olive oil and arrange into the bottom of a glass baking dish. Scatter the tomatoes, feta cheese and onion over the fillets; sprinkle with the lemon juice.
Step 3
Bake until cooked, about 20 minutes
