Layered Enchilada Dinner

Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 can 15 oz ranch style beans undrained
  • ¼ cup chopped green pepper
  • 1 can 10 oz diced tomatoes with mild green chilies, unchained
  • 1 tsp chili powder
  • ½ tsp salt
  • ½ tsp ground cumin
  • ¼ tsp pepper
  • 1 cup 4 oz shredded Monterey jack cheese

Preparation

Step 1

Heat oven to 350. Cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the beans, tomatoes, green pepper, chili powder, salt, cumin and pepper.

Step 2

In oblong pan coated with cooking spray, place two tortillas side by side overlapping if necessary. Layer with a third of the beef mix and cheese. Repeat layers twice.

Step 3

cook for 25 minutes or until heated through and cheese is melted and bubbly.
