Cherry Cheesecake Muffins

Ingredients

  • 1/3 cup cream cheese, 2 tbsp. icing sugar, 1/3 cup butter, 2/3 cup brown sugar, 1 egg, 2 cups flour, 2 tsp. baking powder, dash salt, 2/3 cup milk, 1/3 cup cherry jam, 2 tbsp. finely chopped pecans.

Preparation

Step 1

Blend cream cheese with icing sugar and set aside. In bowl, cream butter and brown sugar. Beat in egg. Combine flour, baking powder and salt and add to creamed mixture with milk, just until blended.

Step 2

Spoon into large greased muffin tins, filling 1/2 way to the top. Add 1 tsp. of cream cheese mixture and 1 tsp. of jam to each. Top with remaining batter. Sprinkle with nuts.

Step 3

Bake in 375 degree f. oven for 1/2 hour or until firm to the touch. Makes 12.
