Ingredients

  • 1 pack of smoked sausage slice into rounds
  • 1 large onion peeled and chopped
  • 5 large potatoes peeled and chopped into 1/2 inch cubes
  • Olive oil
  • Sea salt
  • Black pepper
  • Sweet paprika
  • Thyme
  • Cheddar cheese

Preparation

Step 1

Preheat oven to 400 F.

Step 2

Line baking tray with foil and spray with cooking spray

Step 3

Put sausage, onions, and potatoes into large bowl. Drizzle with a couple Tablespoons of olive oil and season to taste with, salt, pepper, paprika, thyme.

Step 4

Toss together with your hands. Pour this out onto baking tray, and spread it out as much as you can.

Step 5

Roast for 45 minutes to an hour, stirring every 15 minutes until potatoes are golden brown and tender. Scatter cheese over top, pop back into the oven a few minutes to melt cheese.

Turn off oven before you pop back in with the cheese.
