  • Potatoes
  • 1 tablespoon butter
  • 1/2 cup green pepper diced
  • 1/3 chopped yellow onion
  • 1 cup thinly sliced mushroom
  • 2 slices bacon
  • 3/4 cup shredded cheese
  • 3 tablespoon milks

Preparation

Step 1

Preheat oven to 425, pierce several times with a fork. Bake until tender, about 1 hour

Step 2

Melt butter in a large nonstick skillet over medium heat, add green pepper and onion, saute until tender about 5 minutes. Stir in mushrooms and bacon until tender. Set aside.

Step 3

Remove potatoes from oven, slice off tops, scoop insides out, keep shells intake. In medium bowl mash potatoes stir in 1/2 cup cheese, milk and veg mix.

Step 4

Spoon mixture into shells, bake until hot about 20 minutes
