Ingredients

  • 3 pounds sweet potatoes cooking spray 1 c. evaporated milk
  • 1 c. sweetened condensed milk 4 lg. eggs ,beaten
  • 1 stick unsalted butter melted,plus 1 stick at room temp.
  • 3 c. packed light brown sugar 2 tbsp. cinnamon
  • 2 tsp.vanilla 2 tsp. allspice 2 tsp. nutmeg 1 tsp. cloves
  • 1 tsp. ginger 1 tsp. salt 2 c. chopped pecans 2 c.unsweetened coconut flakes 1 c. flour 1 pound marshmellows

Preparation

Step 1

Prick Lg. sweet potatoes and bake in 425 for 45 - 55 min until tender.Let cool then peel and mash in a bowl with a fork.

Step 2

Coat two 8in. square casserole dishes with cooking spray.

Step 3

Add evaporated milk,condensed milk,eggs,melted butter,1 c. light brown sugar,cinnamon,vanilla,allspice,nutmeg,cloves,ginger, and salt stir to combine with your sweet potatoes.

Step 4

Divide between your dishes.In a bowl mix pecans,coconut,flour,and remaining butter and light brown sugar to make the crumble.

Step 5

Crumble the mixture on top both dishes.Top with marshmallows.Bake 350 for 30-45 until deep golden brown.
