Ingredients
- 1 and 1/4 cup gingersnap crumbs
- 3 tablespoon butter
- 3 packages cream cheese (8 ounces)
- 1 and 1/4 cup sugar
- 1 cup whipping cream
- 1 tablespoon vanilla
- 6 large eggs seperated
- 2 cans pumkinn pie mix (16 ounces)
- 2 large eggs
- 1 tablespoon powdered sugar

Preparation
Step 1
Combine butter and crumbs to make crust.
Step 2
Beat cream cheese until smooth and add 1 cup sugar and 6 eggs yolks.
Step 3
Pour 2 and 1/2 cups into crust.
Step 4
Add pumpkin pie mix and 2 eggs to remaining mixture and stir well.
Step 5
Beat egg whites until foamy and add 1/4 cup sugar and beat to stiff peaks.
Step 6
Fold into pumpkin mix and pour into crust.
Step 7
Bake at 300 degrees for 1 and 1/2 hour then let stand in oven with door open for 1 and 1/2 hour.
Step 8
Whip together cream and powdered sugar for sides of cake.
