Ingredients

  • 1 8 oz pkg cream cheese
  • 1/4 cup sugar
  • 1 egg, beaten
  • 2 cups flour
  • 1 3/4 cups sugar
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp salt
  • 1 cup oil
  • 3 eggs, beaten
  • 3 cups shredded carrot
  • 1/2 cup chopped nuts

Preparation

Step 1

1. Combine cream cheese, sugar, and egg. Mix well until blended. Set aside.
2. Combine dry ingredients.
3. Add oil and eggs (combined) until moist.
4. Fold in carrots and nuts.
5. Reserve 2 cups of batter. Pour remaining batter into a 9 in bundt pan (greased and floured).
6. Pour cream cheese mixture over batter. Carefully spoon reserved batter over cream cheese, spreading to cover.
7. Bake at 350 F for 55 minutes. Cool for 10 minutes. Remove from pan. Cool and sprinkle with powdered sugar.
