  • 3 cups flour
  • 2 tsps baking powder
  • 1 tsp salt
  • 4 to 6 tbsps lard or vegetable shortening
  • 1 1/4 cups warm water

Preparation

Step 1

In a big bowl, mix the first 3 ingredients.

Cut the lard/shortening in using a pastry cutter, blender, or use your hand like my mother in law does. The mixture should be firm and sticky and easily rolled into a ball, without sticking too much to your fingers.

If it's too crumbly, that means that you don't have enough shortening or that it hasn't been properly mixed in. If it's too hard, then you have too much shortening and not enough flour.

Step 2

Add the water and mix until you have dough.

Work it in the bowl, moving it around the sides to pick up any flour remaining in the bowl. Then form into a ball and knead by pushing down and then folding in half. Do this until it's not sticky anymore.

Step 3

Cover with a tea-towel or cling-film and let rest for 5/10 min.

The resting time is crucial to have soft tortillas.

Step 4

Take the ball of dough and break off 1-inch pieces. Knead each of these into a ball by folding them over with your fingers. Turn and repeat until you have a flat disk.

Let the disks rest for an additional 10 minutes. This makes them easier to roll out later.

Step 5

Flour your work surface.

Take one ball and roll it out until it becomes thin and round. Keep turning the dough clockwise so that it keeps its round shape.
You want the tortilla to be 1/8-inch thick and approximately 8 to 10 inches in diameter, but it also depends on how thick/large you want them to be.

Step 6

Place the tortilla on a preheated cast iron pan and cook until it starts puffing up with air pockets. Cook each side for about 30 seconds. Apply slight pressure on the middle of the tortilla to make sure that it's fully cooked.

You can store them in a plastic bag or container for a few days in the fridge, and you can even try freezing them.

If you make too many, be sure to keep them in the fridge.
