Ingredients

  • 1 1/4 cups sugar
  • 1/2 cup margarine or butter, softened
  • 2 eggs
  • 1 1/2 cups mashed bananas (3 to 4 medium)
  • 1/2 cup buttermilk
  • 1 tsp vanilla
  • 2 1/2 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup chopped nuts, if desired

Preparation

Step 1

1. Mix sugar and margarine in large bowl. Stir in eggs until well mixed.
2. Add bananas, buttermilk and vanilla. Beat until smooth.
3. Stir in remaining ingredients except nuts.
4. Stir in nuts.
5. Preheat oven to 350 F. Bake 8-inch loaf for 1 hour. Bake 9-inch loaf for 1 1/4 hours or until tooth pick comes out clean.
