Ingredients
- 1 lb dark chocolate
- 9 oz butter
- 5 oz egg yolks
- 12 oz egg whites
- 2.5 oz sugar
Preparation
Step 1
melt the chocolate over hot water. remove from heat and add the butter stirring until the butter is melted and completely mixed in.
Step 2
Add the egg yolks one at a time. Mix in each egg yolk completely before adding the next.
Step 3
Beat the egg whites until they form soft peaks. add the sugar and beat until the egg whites become stiff but moist. Do not over beat. Gently fold in the egg whites into the chocolate mixture.
