Melvin's favorite Meatloaf

Melvin one the medics at my station loves meatloaf. When made this for him he almost cried. He said it tasted just like his mothers. that is one more compliment.

Ingredients

  • 1 1/2 lbs ground beef ( I like 80 / 20 Blend)
  • 1 slice bread torn with hands is fine
  • 1 egg
  • 1 small vidalia onions
  • 1 teaspoon table salt
  • 1/4 teaspoon black pepper
  • 4 tablespoons ketchup
  • 1/2-2/3 cup milk
  • Glaze
  • 4 tablespoons apple cider vinegar
  • 2 -4 tablespoons dark brown sugar, packed firm (to taste)
  • 1/2 cup ketchup

Preparation

Step 1

Pre heat oven to 350 degrees

Step 2

Combine meat loaf ingredients in a large mixing bowl
Mix well using hands

Step 3

Spray loaf pan with non stick spray

Step 4

Add Meatloaf mixture into loaf pan and smooth out

Step 5

Combine glaze ingredients in a mixing bowl and pour over meatloaf in loaf pan.

Step 6

Bake in oven for 60 minutes

Step 7

Meatloaf should be plump and not runny. Let sit for 2 to 5 minutes for easier slicing.

Step 8

Plate and enjoy

If using a higher fat ground beef line the loaf pan with sliced bread on the bottom , sides and ends to absorb excess fat. Also makes removing meatloaf easier.
