Baked Potato Soup

Ingredients
- 5 medium baking potatoes
- 1 onion, diced
- 12 strips bacon
- 1/2 cup flour
- 5 1/2 cups chicken broth
- 1 teaspoon parsley flakes
- 2 cups half & half
- 1 cup shredded cheddar cheese
- 8 oz. cream cheese
- Garnish- extra cheese

Preparation
Step 1
Preheat oven to 400 degrees. Cover scrubbed potatoes with aluminum foil. Pierced and place on a baking sheet. Bake for 45-60 minutes or until fully cooked. Let cool.
Step 2
Peel and dice the potatoes; set aside. In oven, cook bacon. Saute onion in bacon grease. Season with salt and pepper. Add in the flour and cook for 1 minute. Slowly add in the chicken broth and cook until thickened. Add the mixture to crock pot.
Step 3
Add in the potatoes, parsley, half & half, and most of the bacon. (Reserve some bacon to use as garnish.)
Step 4
Cook on low for 3 to 4 hours. Stir in the cheese and cream cheese and cook for a 1/2 hour more on high.
Step 5
Ladle into bowls and garnish with cheese and bacon.
