Ingredients
- 3/4 Cup soy flour
- 1 Tablespoon cocoa powder
- 3/4 Cup granular sugar substitute (sucralose)
- 1/4 Teaspoon salt
- 1/3 Cup unsweetened peanut butter
- 1/2 Cup heavy cream
- 2 large eggs
- 1 Teaspoon vanilla extract
- 2 Teaspoons chocolate extract
Preparation
Step 1
Heat oven to 375°F. Lightly spray baking sheets with cooking spray.
Whisk soy flour, cocoa powder, sugar subsritute, and salt in a bowl. In another bowl mix peanut butter, cream, eggs, vanilla and chocolate extracts until smooth. Add to dry ingredients; stir until blended.
Drop dough by tablespoonfuls onto greased baking sheets. Smooth dough with fingertips and press cookies with a fork to flatten. Bake 8-10 minutes, until browned.
Cool on cookies on baking sheets 1 minute before transferring to wire racks to cool completely.
