Ingredients
- 2 quarts oil for frying
- 1 cup all purpose flour
- 2 tsp baking powder
- 1 pinch salt
- 1 1/2 tsp sugar
- 2 eggs beaten
- 1 cup ricotta cheese
- 1/4 tsp vanilla extract
- 1/2 cup powdered sugar for dusting

Preparation
Step 1
Heat the oil in a deep fryer to 350F
Step 2
In a medium sauce pan, combine the flour, baking powder, salt and sugar. stir in the eggs, ricotta and vanilla. mix gently over low heat until combined and batter is sticky.
Step 3
drop by the tablespoon into the hot oil a few at a time. zeppole will turn over by themselves. fry until golden brown about 3-4 minutes. drain on paper towels. Cool slightly and dust with powdered sugar. serve warm
