Emeril uses fresh herbs. They are often expensive so I have substituted dried herbs. If you have fresh herbs use them.

Ingredients

  • 3 strips thick cut bacon
  • 1 1/2 tablespoons minced garlic
  • Dust with dry sage
  • 1 1/2 teaspoons fresh chopped rosemary
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 3 tablespoons of butter
  • 2 teaspoons salt divided
  • 1 teaspoon black pepper divided
  • 1 ( 5.5 - 6 lb.) turkey breast

Preparation

Step 1

Cook the bacon until crisp. Chop it up finely. add the garlic, sage, rosemary, oregano, thyme, butter, 1 teaspoon of salt, 1/2 teaspoon of pepper. Stir and form a paste.

Step 2

Gently loosen the skin on both sides of the turkey breast. Divide the herb mixture in half and gently spread the mixture on both sides of the turkey breast.

Step 3

Season the outside of the turkey breast with the rest of the salt and pepper. Brush the breast with the left over bacon fat. Place on tin foil in pan and bake for 1 hour or until clear juice runs out when pricked at
375 F.
