Ingredients
- 1 lb chicken, cubed
- 1/2 onion or 1 tbsp onion powder
- 1 red or green bell pepper, diced
- 1 small jalapeno pepper, finely chopped
- 1 cup bbq sauce
- 1/4 cup chicken broth
- 1 8 1/2 oz box cornbread mix
- 3 tbsp reduced fat milk
- 1/2 cup shredded white cheddar

Preparation
Step 1
Heat oven to 375. In sauce pan, cook chicken with onion, bell pepper, and jalapeno with some water to keep it from sticking to the pan. Once the chicken is done, stir in bbq sauce and broth, heat through. Transfer to a baking dish and set aside.
Step 2
Combine cornbread mix, egg, milk, and cheese, stir just until combined. Spoon batter in mounds over the chicken mixture. Bake until cornbread is cooked through and juices are bubbling, about 25 minutes.
