Ingredients

  • 4 boneless, skinless chicke breast halves
  • 2 cups water
  • 1/2 teaspoon each of onion powder, garlic powder, chili powder, dried oregano and salt
  • 1 pound small new potatoes
  • 8oz. Fresh pearl onions, blanched and peeled, or frozen pearl onions, thrawed
  • 2 tablespoon oil

Preparation

Step 1

Combine onion powder, garlic powder, chili powder, oregano and salt in small bowl. Sprinkle evenly over both sides of chicken. Set aside

Step 2

Combine water, potatoes and onions in large nonstick skillet. Bring to boil over medium- high heat cover. Boil 12 minutes or until potatoes are tender when pierced with a fork. Drain well. Set aside in colander.

Step 3

Return skillet to medium-high heat until hoy. Coat with nonstick cooking spray. Add chicken. Cook 3 minutes; turn. Add potatoes and onions. Drizzle with oil cover. Cook 3 -4 minutes or until chicken is no longer pink in center. Turn chicken. Stir potatoes and onions. Remove from heat. Let stand 3 minutes before serving.
