Ingredients

  • 2 Big onions
  • 2 Big carrots
  • 2 Medium sized Potatoes
  • 1 cup Peas
  • 2 or 3 Green Chillies
  • Bay Leaf
  • 1 Cinnamon Sticks
  • 2 pinches Cardamom
  • Salt to taste
  • 2 tbsp Ghee
  • 1 1/2 cups Basmati Rice

Preparation

Step 1

Wash and Soak Basmati rice for about 15 mins.

Step 2

ut Onions into thin slices. Cut carrot and potatoes into 1/2 inch thin slices or into cubes (as per choice).

Step 3

In a flat bottom pan (preferrably pressure pan or non stick pan), add 1/2 tbsp of ghee.

Step 4

Drain the rice completely and fry it in the ghee. Let it cool.

Step 5

Add 1 tbsp of ghee and when hot add bay leaf, cinnamon sticks

Step 6

Remove the skin of the cardamom pods slightly and add to the ghee. Slit the green chillies slightly and add to the ghee and immediatly add the onions. Add a pinch of salt so that the onions get cooked but dont turn brown.

Step 7

Add the cut vegetables and green peas to it and saute for a min. Add 2 cups of water and salt. When the water comes to a boil add the rice to it and cover it. In between mix it thoroughly.

Step 8

After 10 mins reduce the flame and let it simmer. Remove from flame after another 8 to 10 mins (one have to keep check whether the rice have not settled at the bottom and got browned up). Add the remaining ghee and mix it up thoroughly. If you are using oil, at the end add just 1/2 tbsp of ghee for the aroma.

Step 9

This can be decorated with coriander leaves, cashew nuts, and fried paneer cubes.
