Ingredients
- 2¼ cups all purpose flour
- 1 tsp. baking soda
- 1½ tsp. cornstarch
- ½ tsp. salt
- ¾ cup butter – melted
- ¾ cup brown sugar
- ½ cup white sugar
- 1 egg + 1 egg yolk
- 2 tsp. vanilla extract
- 1 cup mini chocolate chips

Preparation
Step 1
In a large bowl gently combine flour, baking soda, cornstarch & salt
Step 2
In a medium bowl whisk together melted butter, brown sugar & white sugar until no lumps remain
Step 3
Whisk in egg and then egg yolk until smooth
Whisk in vanilla
Step 4
Pour wet ingredients into dry ingredients and mix together with wooden spoon or spatula – the dough will be very soft
Step 5
Fold in chocolate chips
Cover and chill the dough for at least 2 hours, but up to 3 days
Step 6
Remove dough from refrigerator and allow to slightly soften at room temperature
Step 7
Preheat oven to 325
Line 2 cookie sheets with parchment paper

Roll the dough into balls, about 1 Tablespoon each
Step 9
Place dough balls about 2 inches apart on prepared cookie sheet
Step 10
Bake for 10 minutes
Cool on the cookie sheet for 10 minutes then remove to a wire rack to cool completely
Roll the cookie dough into balls that are taller rather than wide, this will help ensure the cookies will bake up thick
Cookies will look under baked but that is okay, they will continue to cook on the cookie sheet as they cool
