Ingredients

  • 1 LB Beef, such as sirloin or round
  • Marinade:
  • 2 Tbsp Oyster Sauce
  • 1 Tbsp Light Soy Sauce
  • 1 tspn Granulated Sugar
  • 2 tspn Vegetable Oil
  • 1 1/4 tspn Cornstarch
  • Other:
  • 4-6 Tomatoes
  • 2 ribs Celery
  • 2 Spring Onions (green onions, scallions)
  • 2 slices Ginger
  • 1 clove Garlic (peeled and chopped)
  • 2 1/2 Tbsp Oil for stir-frying
  • 2 tspn Sugar
  • 1/4 tspn Salt
  • 1 Tbsp Cornstarch mixed with 2 Tbsp water
  • To taste Salt and pepper
  • Optional Sliced red/green peppers

Preparation

Step 1

Cut beef into thin slices (approximately 1 1/2 inches). Add marinade ingredients. Cover and marinate in the refrigerator for 15 min.

Step 2

While meat is marinating, prepare the remainder of the vegetables. Heat a large pot of water to boiling. Scald tomatoes, plunging briefly into boiling water, remove skin and cut each into 4-6 pieces.

Step 3

Diagonal cut celery and spring onions into sections about the same length as beef. Heat a wok over medium-high heat. Add 2 Tbsp of oil to wok. When oil is hot, add garlic. Cook briefly until aromatic, then add beef. Let brown briefly, then stir-fry until it changes color and is 80% cooked through. Remove from wok. Clean out wok if necessary.

Step 4

Heat wok and 1/2 Tbsp oil. Add ginger. Stir-fry for a few seconds, then add celery. Add tomato. Sprinkle 2 tspn sugar and 1/4 tspn of salt. Cover and bring to a boil.

Step 5

Re-stir cornstarch/water mixture. Uncover wok and push tomatoes to the side. Add cornstarch mixture in the middle, stirring quickly to thicken. Add meat back to pan. Mix everything.
