Ingredients
- 1 Tbsp Olive Oil
- 2 Tbsp Butter (divided)
- 2 (6 to 8 oz) fillets Sea Bass (skin on)
- To Taste Salt and freshly Ground Black Pepper
- 1/3 cup Vermouth
- 4 sprigs Fresh Thyme
- A Pinch Saffron
- 1/4 cup heavy cream

Step 1
Heat olive oil and 1 Tbsp butter in large skillet. Season the fillets with some salt and pepper.
Step 2
Place fillets in skillet and cook about 5 min on each side.
Step 3
Once fish is cooked, set aside on a plate and pour vermouth in pan. Add thyme and saffron leaving to bubble until it's reduced by two thirds. Add remaining butter and whisk followed by heavy cream and heat through.
