Skinny Seven Layer Salad
Here is a recipe my mother used to make for parties as an appetizer or a healthy light dinner.. seven layer salad..it's a perfect spring salad! This is a repost recipe but I just had to post it again, since it's almost spring and this is a great salad to bring along to those parties, barbecue's, showers, etc. enjoy!

Ingredients
- 1 pound turkey bacon
- 7 hard cooked eggs, (use egg whites only if desired)
- 1 head lettuce, chopped
- 2 cups chopped tomatoes
- 1 red onion, chopped
- 1 10 oz. bag frozen peas, thawed
- 1 10 oz shredded fat free cheddar cheese
- 2 cups light mayonnaise
- 2 1/2 tablespoons white sugar
- 1 cup grated Parmesan cheese

Step 1
1. Cook turkey bacon until crispy. Crumble and let drain on paper towel.
Step 2
2. In a large glass bowl, place the chopped lettuce in the bottom. Add egg whites, onions, tomatoes, peas, shredded cheese, and turkey bacon.
Step 3
3. Prepare dressing by whisking together mayonnaise, sugar, and Parmesan cheese. Drizzle over salad and refrigerate until chilled.
