Tiramisu

Ingredients
- 2 cups boiling-hot water and 3 Tbsp instant-espresso powder (or 2 cups of freshly brewed espresso)
- 1/2 cup plus 1 Tbsp sugar divided
- 3 Tbsp Tia Maria (coffee liqueur)
- 4 large egg yolks
- 1/3 cup dry Marsala
- 1 lb mascarpone (2/4 cups)
- 1 cup chilled heavy cream
- 36 Italian ladyfinger biscuits from two 7-oz packages
- Unsweetened cocoa powder for dusting
- 13x9x3 inch baking dish

Preparation
Step 1
Stir together water, espresso powder, 1 Tbsp sugar, and Tia Maria in a shallow bowl until sugar dissolves; cool.
Step 2
Beat egg yolks, Marsala, and remaining ½ cup sugar in a metal bowl set over a saucepan of barely simmering water using a whisk or electric mixer until tripled in volume, 5 to 8 minutes. Remove from heat. Beat in mascarpone until just combined.
Step 3
Beat heavy cream in a large bowl until it just holds stiff peaks. Fold mascarpone mixture into whipped cream gently but thoroughly. Dipping both sides of each ladyfinger into espresso mixture, line bottom of baking dish with 18 fingers in 3 rows, trimming edges to fit if necessary. Spread half of mascarpone filling on top. Dip remaining 18 ladyfingers in coffee and arrange over filling in dish. Spread remaining mascarpone filling on top and dust with cocoa powder.
Step 4
Chill, covered, at least 6 hours. Let tiramisu stand at room temperature 30 minutes, then dust with more cocoa.
You can substitute 2 cups freshly brewed espresso for the water and instant-espresso powder. Tiramisu can be chilled up to 2 days.

- 12 oz (1 1/2 cups) mascarpone cheese
- 1/2 cup sour cream
- 1/2 cup icing sugar
Method
- Blend the strawberries to a pulp.
- Mix the mascarpone cheese, sour cream, and sugar.
- Crush the ginger biscuits.
- In a jar or bowl, layer the biscuits, the strawberries, and the cream mix (biscuits, part of cream mix, strawberries, and then another layer of cream mix).
- Top off with a fresh sliced strawberry and some ginger biscuit crumbs.
