Ingredients
- 4 tablespoons butter
- 1 tablespoon extra virgin olive oil
- Onion and Garlic powder
- 1/2 cup finely diced celery
- 1/8 cup all-purpose flour
- 2 cups milk
- 1 (14-ounce) can chicken broth
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried parsley flakes
- 1/8 teaspoon ground nutmeg (optional)
- 3/4 cup finely shredded carrots
- 2 cups coarsely chopped fresh spinach leaves
- 3/4 cup diced cooked chicken breast (you can use a rotisserie chicken)
- 8 oz. packaged ready-to-use gnocchi

Step 1
Melt the butter into the oil in a large saucepan over medium heat. Add the onion and garlic powder, then add celery and carrots and cook until translucent. Whisk in the flour and cook for about 1 minute. Whisk in milk. Simmer until thickened. Whisk in the chicken broth. Simmer until thickened again. Stir in the thyme, parsley, nutmeg spinach, chicken, and gnocchi. Simmer until the soup is heated through.
