Preparation

Step 1

Crust....
Mix with a fork, pastry blender or food processor the flour &shortening to resemble little balls then add salt add COLD water a little at a time untill dough forms a ball or pulls away from the sides of processor. Divide in half and wrap each in either wax paper or plastic wrap. Flatten into a disk shape and chill for at least 30 minutes.

Step 2

While dough is chilling peel and cut the apples. (I like to mix my slices up between thin slices and smaller size chips. Helps to vary the texture of the filling) Mix with all the pie filling items and toss well to coat all the apples

Step 3

When thedough is ready (chilled) to roll preheat your oven to 450 degrees. Roll out dough and place one crust in the bottom of the pie plate/pan. Evenly add apples to crust and top with last crust. Cut slits to vent pie as it bakes. You can get fancy if you choose. it is all up to you.

Step 4

Place filled pie plate/pan on a jelly roll pan or cookie sheet with side to allow for the inevetable bubble over of the fine apple juices. It's easier to clean a pan then the oven. Top with pie ring if you have one or use thin strips of foil to keep edges from burning. Remove this from the top of the pie after it has been baking for about 45 miutes. Bake for 45 to 60 minutes or until golden brown and bubbley.

Step 5

And NOW.... the final steps... after you have removed the "perfect pie" from the oven and let it cool at least 1/2 hour cut a piece and enjoy you homemade master piece
