- 2 large eggs
- 2 TBS flour
- 1 tsp sugar
- 2 c. drained whole kernel corn
- 1 TBS melted butter
- 1/4 tsp salt
- Vegetable oil for frying

Preparation
Step 1
In medium size bowl beat eggs just to mix them. Add corn, flour, margarine, sugar and salt. Beat till well blended.
Step 2
In large skillet, heat oil over medium heat. Drop spoonfulls of the batter (about 1 heaping tablespoon) into hot oil. Do not overcrowd the fritters. Cook 3-4 minutes on each side until fritters are light golden brown. Remove fritters with slotted spoon and drain on paper towels. Serve warm with powdered sugar dusted on top.
So they don't get soggy, put a baking rack on counter and cover with paper towels.
